Quick substitution guide

Replace rice → Little Millet or Foxtail (1:1 ratio, use 2.5 cups water per 1 cup millet)
Replace wheat roti → Jowar flour (Bhakri style) or Bajra flour
Replace maida → Ragi flour for dosa/idli; Jowar flour for flat breads
